My 2nd child was born 8 years ago - I still have everything "Baby" stored away. Now that I am expecting number 3, what kinds of products are not considered outdated and what products do I consider replacing or tossing/donating?

Definitely replace the stroller and carseat. Strollers are so much lighter and turn better these days.
Make sure you get a baby monitor that you can view on your phone! You never have to make sure you are "in range" which is awesome!
Car seats also have expiration dates!!! Check the sticker on the side for it.
Car Seats, Strollers, and if you have that rock and play I would trash. Also, look up anything that has been discontinued to make sure it's still safe. Also, you are my hero. LOL I had my 2nd when my oldest was 8, and I trashed everything!
I held on to everything too and ended up trashing almost everything. FYI, the Johnny jumpers are "dangerous" now lol
I would look all of the big (non-clothing) items up to see if they have any product warnings, recalls, etc.
